These mocha meringues are the perfect little adult sweet treat to nibble with your mid day coffee. With hints of coffee and chocolate it makes for a sweet, elegant and satisfying with Effortless to make, you can whip up a whole batch for the week in one go.
What you will need:
1 egg white
1/8 teaspoon cream of tartar
2 tablespoons caster sugar
1/4 teaspoon vanilla extract
1 tablespoon cocoa powder
1/2 teaspoon instant coffee granules
Beat egg whites and cream of tartar with our Mr Whipstir at a high speed until fluffy and soft peaks are formed
Then, gradually add the sugar, cocoa powder, coffee granules and vanilla and mix in.
Spoon mixture into about 12 separate on an aluminum covered baking tray
Bake for 40 minutes until firm, then turn off the oven and leave to set for 1 hour.
Serve with coffee and enjoy!!
