What you will need:
2 large egg yolks
2 large eggs
150g caster sugar
100g unsalted butter
11 passion fruit
What you need to do:
- Put the pulp of 10 passion fruits into a processor and blend to loosen the seeds, then strain into a bowl.
- Beat the eggs, egg yolk and sugar together
- Melt the butter over a low heat and when melted stir in the sugar-egg mixture and the passion fruit juice and continue cooking gently, stirring constantly until thickened
- Turn off the heat, whisk the pulp seeds and all the remaining passion fruit, let it cool then pour into a 350ml jar and refrigerate.
