Passion Fruit Curd


Passion fruit, one of this seasons finest produce. This tantalizing and tropical fruit is for most a rarity to enjoy, but with this tangy yet creamy Passion fruit curd will bring you the exotic flavors of a tropical island with your morning tea and toast

What you will need:

2 large egg yolks

2 large eggs

150g caster sugar

100g unsalted butter

11 passion fruit

What you need to do:

  1. Put the pulp of 10 passion fruits into a processor and blend to loosen the seeds, then strain into a bowl.
  2. Beat the eggs, egg yolk and sugar together
  3. Melt the butter over a low heat and when melted stir in the sugar-egg mixture and the passion fruit juice and continue cooking gently, stirring constantly until thickened
  4. Turn off the heat, whisk the pulp seeds and all the remaining passion fruit, let it cool then pour into a 350ml jar and refrigerate.
